Ingredients
2 chicken breasts cooked and shredded
1 medium onion chopped
2 medium tomatoes chopped
1/2 cup green olives chopped
1/4 cup cream cheese
2 1/2 cups all-purpose flour
1 cup butter chilled and cubed
2 egg yolks
salt and pepper to taste
1 egg beaten (for brushing)
Instructions
1. Prepare the dough: Mix flour and salt, cut in butter until crumbly, add yolks and water, knead gently, wrap and chill 30 minutes.
2. Cook the chicken: Boil chicken breasts in salted water, shred and set aside.
3. Make the filling: Sauté onions, add tomatoes, then chicken, olives, cream cheese, season and let cool.
4. Assemble the pie: Roll half the dough to line a greased pie dish, add filling, cover with remaining dough, seal edges, cut slits, brush with beaten egg.
5. Bake: Preheat oven to 375°F (190°C), bake 35–40 minutes until golden, cool slightly before serving.
Notes
Make sure dough is cold for flakiest crust.
Let filling cool slightly before assembling to prevent soggy crust.
Use homemade dough for authentic flavor, but store-bought works too.
