Description

This Boat Dip (Rotel Ranch Dip) recipe is the ultimate easy party appetizer made with sour cream, Rotel tomatoes, taco seasoning, and cheddar cheese. Perfect for game day, potlucks, or a quick snack, this creamy dip is bold, tangy, and endlessly customizable. It’s the go-to dip recipe you’ll make again and again.

Ingredients

1 cup sour cream

1 can (10 oz) Rotel diced tomatoes with green chilies (undrained)

1 packet taco seasoning

1 cup shredded cheddar cheese

1 pound ground beef

Instructions

1. In a skillet over medium heat, cook the ground beef until it’s no longer pink. Drain excess fat.

2. Stir in the taco seasoning and let it cool slightly.

3. In a large bowl, combine sour cream, undrained Rotel, seasoned beef, and shredded cheddar. Mix until fully combined.

4. For best flavor, cover and refrigerate for at least 1 hour before serving.

5. Serve with chips, crackers, or veggie sticks and enjoy!

Notes

This dip is even better the next day as flavors blend together.

Don’t drain the Rotel — the juice adds to the dip’s creaminess.

For a spicier version, use Hot Rotel or add chopped jalapeños.
