Ingredients
2 pounds russet potatoes
4 tablespoons unsalted butter
1/2 cup heavy cream
1/2 cup whole milk
1 1/2 teaspoons salt
1/2 teaspoon black pepper
2 cloves garlic (optional)
2 tablespoons chopped chives (optional)
Instructions
1. Peel the russet potatoes and cut them into evenly sized chunks.
2. Place them in a large pot, cover with cold water, and add a pinch of salt.
3. Bring to a boil and simmer for 15-20 minutes until fork-tender.
4. In a separate saucepan, warm the butter, heavy cream, and milk over low heat.
5. Drain the cooked potatoes and return to the pot.
6. Mash using a potato masher or ricer to your desired consistency.
7. Slowly add the warm dairy mixture while continuing to mash.
8. Season with salt and pepper to taste.
9. Stir in roasted garlic if using.
10. Garnish with chopped chives and serve warm.
Notes
Use Yukon gold potatoes for a richer flavor.
Heat the milk and cream to keep the potatoes from getting gummy.
For ultra-smooth potatoes, use a ricer instead of a masher.
