Description
This classic Beef Stroganoff recipe features tender sirloin beef in a creamy mushroom and sour cream sauce, served over egg noodles or mashed potatoes. It’s a comforting, easy-to-make dinner ready in under 40 minutes. A perfect family meal packed with rich, savory flavor.
Ingredients
2 tablespoons olive oil
1 pound beef sirloin, thinly sliced
2 tablespoons butter
1 medium onion, chopped
2 cloves garlic, minced
8 ounces cremini mushrooms, sliced
2 tablespoons all-purpose flour
1 cup beef broth
1 teaspoon Dijon mustard
3/4 cup sour cream
Salt and pepper to taste
12 ounces egg noodles, cooked (or mashed potatoes for serving)
Chopped parsley for garnish (optional)
Instructions
1. Heat olive oil in a skillet over medium-high heat and sear the beef in batches until just browned. Set aside.
2. In the same skillet, melt butter. Add onions and cook until softened, about 3–4 minutes. Add mushrooms and cook until golden brown. Stir in garlic and cook for 1 more minute.
3. Sprinkle flour over the vegetables and mix well. Slowly pour in beef broth while stirring to avoid lumps. Stir in Dijon mustard and let the sauce simmer until slightly thickened.
4. Reduce heat to low and add sour cream, stirring until combined. Do not boil.
5. Return the seared beef to the pan and stir to coat with sauce. Heat through.
6. Serve over cooked egg noodles or mashed potatoes and garnish with chopped parsley if desired.
Notes
Be sure to slice the beef thinly across the grain to keep it tender.
Don’t boil the sour cream or it may curdle—keep the sauce at a gentle simmer.
Leftovers taste even better the next day, so make extra if you can!
