Ingredients
1 lb flank steak or sirloin, thinly sliced
2 bell peppers, sliced (red, yellow, or green)
3 cups cooked jasmine or long-grain rice
3 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon sesame oil
1 tablespoon cornstarch
2 green onions, chopped
1 tablespoon vegetable oil (for cooking)
Instructions
1. Slice the beef thinly across the grain and toss with cornstarch and 1 tablespoon soy sauce. Set aside.
2. In a large skillet or wok, heat half the oil over medium-high heat. Add sliced bell peppers and stir-fry until tender-crisp. Remove and set aside.
3. Add remaining oil to the skillet. Spread beef in a single layer and sear until browned and just cooked through.
4. Return peppers to the skillet. Add minced garlic, remaining soy sauce, and sesame oil. Stir everything together and cook for 1–2 more minutes until flavors meld.
5. Spoon beef and peppers over warm rice. Top with chopped green onions. Serve hot.
Notes
This recipe can be made spicier with chili flakes or sriracha.
For a low-carb version, use cauliflower rice instead of regular rice.
Marinate tougher cuts of beef longer to enhance tenderness.
