Ingredients
1 flatbread
1/3 cup BBQ sauce
3/4 cup cooked chicken, shredded or chopped
3/4 cup shredded mozzarella
1/4 small red onion, thinly sliced
1 tablespoon fresh cilantro, chopped (optional)
1 teaspoon olive oil
Instructions
1. Preheat your oven to 425°F and line a baking sheet with parchment paper. Lightly brush the flatbread with olive oil, especially around the edges.
2. Spread BBQ sauce evenly over the flatbread, leaving a small border around the edge.
3. Distribute the cooked chicken evenly on top of the BBQ sauce.
4. Sprinkle mozzarella cheese across the top, followed by the sliced red onions.
5. Bake in the oven for 8 to 10 minutes until the cheese is melted and bubbly, and the edges are golden.
6. Remove from oven, let rest for 1 minute, garnish with chopped cilantro (optional), slice, and serve hot.
Notes
This recipe works great with naan or lavash flatbread.
You can swap the mozzarella for smoked gouda or cheddar.
Add bacon or pickled jalapeños for extra flavor if desired.
