Ingredients
2.5 pounds Yukon Gold potatoes, cut into wedges 1/3 cup olive oil 1/4 cup fresh lemon juice 4 cloves garlic, minced 1 teaspoon dried oregano 1 cup chicken broth (or vegetable broth) 1 teaspoon salt 1/2 teaspoon black pepper
Instructions
1. Peel and cut the potatoes into evenly sized wedges. Preheat the oven to 400°F (200°C). In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, pepper, and broth. Toss the potato wedges in the marinade until fully coated. Spread them in a single layer on a baking pan, pouring over any remaining marinade. Roast the potatoes for 40–50 minutes, turning them halfway through. Add more broth during roasting if they look dry. Once golden brown and fork-tender, remove from oven. Garnish with extra oregano or parsley if desired, and serve warm.
Notes
Use Yukon Gold potatoes for the creamiest texture. Turn potatoes halfway through roasting for even browning. Reheat leftovers in the oven to retain their crispiness.
