Ingredients
1 lb ground chicken
3 tablespoons soy sauce
2 tablespoons hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
3 green onions, chopped
1 can (8 oz) water chestnuts, drained and chopped
1 head butter lettuce, leaves separated and rinsed
1 tablespoon cooking oil (for skillet)
Instructions
1. Heat a large skillet over medium-high heat and add cooking oil. Add ground chicken and cook until browned and fully cooked.
2. Add minced garlic and grated ginger. Cook for 1-2 minutes until fragrant.
3. Stir in soy sauce, hoisin sauce, rice vinegar, and sesame oil. Mix well and let simmer for 2-3 minutes.
4. Add chopped water chestnuts and green onions. Stir and cook for another minute, then remove from heat.
5. Scoop chicken mixture into butter lettuce leaves. Serve immediately and enjoy.

You can make the filling ahead and store it separately from the lettuce.
