Ingredients
1 1/2 pounds apricots (fresh, canned, or thawed frozen)
1 cup granulated sugar
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup butter
1/2 teaspoon cinnamon (optional)
Instructions
1. Slice apricots or drain if canned. Toss with 2 tablespoons of sugar and set aside.
2. Preheat oven to 350°F. Place butter in baking dish and allow it to melt in oven.
3. In a bowl, combine flour, remaining sugar, baking powder, and salt. Add milk and stir until smooth. Add cinnamon if using.
4. Pour batter into dish over melted butter. Do not stir. Spoon apricots and juices over batter evenly.
5. Bake for 40 to 45 minutes until golden and bubbly. Let cool slightly before serving.
