Ingredients
2 large apples (Granny Smith or Honeycrisp, peeled and diced)
2 tablespoons brown sugar
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
⅛ teaspoon nutmeg
1 pinch salt
2 teaspoons cornstarch
1 teaspoon vanilla extract
10 egg roll wrappers
1 tablespoon butter
2 tablespoons water (for sealing)
Oil for frying
Optional: cinnamon sugar for dusting
Optional: caramel sauce for dipping
Instructions
1. Peel and dice the apples into small cubes.
2. In a skillet over medium heat, melt butter and add apples, brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Stir and cook for 8 to 10 minutes until soft and lightly caramelized.
3. In a small bowl, mix cornstarch with a splash of water. Stir into the apple mixture and cook for 1 to 2 minutes until thickened.
4. Remove from heat and stir in vanilla extract. Let cool slightly.
5. Place an egg roll wrapper on a clean surface. Add 2 tablespoons of the apple filling.
6. Fold in the sides and roll tightly, sealing the edge with water.
7. Heat oil to 350°F. Fry egg rolls in batches until golden and crispy, about 2 to 3 minutes per side.
8. Drain on paper towels. Serve warm with cinnamon sugar or caramel sauce.
Notes
Use firm apples to prevent the filling from turning mushy.
Don’t overfill the wrappers to avoid bursting while frying.
For a lighter version, try air frying at 375°F for 10–12 minutes.
