Ingredients

3 large eggs

3/4 cup sugar

1/2 cup unsalted butter, melted

1 1/2 teaspoons anise extract

1/2 teaspoon vanilla extract

1 3/4 cups all-purpose flour

2 teaspoons baking powder

Instructions

1. In a large bowl, whisk together the eggs and sugar until light and creamy.

2. Stir in melted butter, anise extract, and vanilla extract until smooth.

3. Add flour and baking powder, mixing until a thick batter forms.

4. Preheat your pizzelle iron and lightly grease if not nonstick.

5. Drop about 1 tablespoon of batter into each mold and close the lid.

6. Cook for 20 to 45 seconds until golden, depending on your iron.

7. Remove with a spatula and cool on a wire rack to crisp up.

Notes

Let pizzelles cool flat to maintain their crisp shape.

Store in an airtight tin to preserve texture.

To make cones, shape them while still warm using a wooden dowel.
