Ingredients
10 cups popped popcorn
1 cup brown sugar
½ cup unsalted butter
¼ cup light corn syrup
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
Instructions
1. Pop your popcorn using an air popper or stovetop. Place 10 cups of popcorn in a large bowl and remove any unpopped kernels.
2. In a saucepan over medium heat, melt the butter. Add the brown sugar, corn syrup, and salt. Stir until everything combines and comes to a gentle boil.
3. Stop stirring once it boils and let it cook undisturbed for 4 minutes.
4. Remove from heat and stir in the baking soda and vanilla. The mixture will foam up.
5. Quickly pour the caramel over the popcorn and toss to coat thoroughly.
6. Spread the coated popcorn onto a parchment-lined baking sheet.
7. Bake at 250°F (120°C) for 45 minutes, stirring every 15 minutes.
8. Let it cool completely before breaking into clusters. Store in an airtight container.
Notes
Use plain, unbuttered popcorn for best results.
Stirring during baking ensures an even caramel coat.
Let cool fully before storing to preserve the crunch.
