Ingredients
1 pound chicken breasts, boneless and skinless
1 teaspoon salt
1 teaspoon black pepper
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/3 cup grated Parmesan cheese
1 teaspoon garlic powder
Olive oil spray
1 cup marinara sauce
1 cup shredded mozzarella cheese
Instructions
1. Pound the chicken breasts to an even 1/2-inch thickness and season with salt and pepper.
2. Set up your breading station with flour in one dish, beaten eggs in another, and a mixture of panko, Parmesan, and garlic powder in the third.
3. Coat each piece of chicken in flour, then egg, and finally the breadcrumb mixture. Press to adhere well.
4. Preheat the air fryer to 400°F. Spray both the basket and chicken with olive oil spray.
5. Air fry the chicken for 10 minutes, flipping halfway, until golden and cooked through.
6. Spoon marinara sauce over each piece, top with shredded mozzarella, and return to the air fryer for 2–3 minutes until cheese is melted.
7. Serve immediately, or store in an airtight container for up to 3 days.
Notes
Use panko breadcrumbs for the crispiest coating.
Don’t skip spraying the chicken with oil — it helps it brown.
Freeze uncooked, breaded chicken for a make-ahead meal.
